What could make this wonderdul day even better???

A Grizzlies WIN! 
Tonight #8 Memphis Grizz defeated #1 San Antonio Spurs to move on to the second round of the NBA playoffs!
I'm so proud of these boys! They played with such heart <3.
Ahhh, this is SO exciting! I love my city!

Today is my LAST day of Student Teaching...
...& I'm marrying this hunk in a mere 8 days.

365 Chicken: Recipe 1

My sweet man's favorite food is chicken. So I was totally stoked when I came across this old school cookbook at a discount bookstore in Millington for just 6 bucks! 365 chicken dishes. Jonathan's tummy will be so happy :)


As I try these recipes, I will post some of my favorites on here.  Last night I picked out a recipe that sounded tasty & easy to make for dinner for dad, mom, and myself. The recipe I made is called: Bake Chicken Reuben. The recipe looked simple and I LOVE Reuben sandwiches, so I thought it was a great recipe to start off with!

{365 Chicken: Recipe 1}

Bake Chicken Reuben

Ingredients:
-Boneless, skinless chicken breasts
-1/4 teaspoon of salt
-1/8 teaspoon of pepper
-1 can (16 ounces) sauerkraut, well drained
-Swish cheese
-Thousand Island dressing
Preheat your oven to 325.
Place chicken in a greased baking pan. 
Sprinkle with salt & pepper.
Spoon sauerkraut over chicken.
Arrange cheese slices over sauerkraut.

Pour dressing evenly over top.
Cover pan with aluminum foil.
Bake about 1.5 (it didn't take mine that long to cook).

Right out of the oven!

Delicious dinner! :)

Oh & I'm so pumped that my parent's elliptical came in today! Ready to get some good workouts in before the BIG day. :)
 Tomorrow is my last day of Student Teaching & I get to go on a field trip with my sweet fifth graders! I'm so excited! :)

We are now in single digits! Let the countdown begin!
Yesterday Jonathan and I did a few wedding errands:

We got our marriage license!

We picked out his wedding band!
He decided to go with Titanium since it is durable & a poor conductor of electricity.
(Jon is an electrician & gold rings can be dangerous for him on the job.)
Our jeweler ordered a couple of styles we liked and we will make the final decision when they come in next week!

I couldn't resist trying it on with my engagement ring on the drive home. :)

Just 9 more days until we are married!!! :)

House Update :)

As I said in previous posts, Jonathan and I, are fixing up my great-grandmother's house to be our first home. :) We get to live there RENT FREE, so we don't mind taking a little time & money to fix it up a bit.  And both his parents and my parents have been a huge help! We all have been working hard painting walls, laying down kitchen & bathroom floors, & installing cabinets, countertops, & bathroom vanities....We have seriously had our own "Extreme Home Makeover" and it's looking awesome! So warm and homey. :) I will post pictures soon! But I was just so excited about our new bedding from West Elm that I had to give y'all a sneak peak!

mmmm mmmm


Have any of you ever been to Abbays? I lived like three minutes from there for the past two years and never tried it until last week. Now I'm addicted. Best sweet potato casserole ever. Mmmm mmmm. I HIGHLY recommend it.

My weekend was full of friends, family, and LOTS of wedding fun.

Thursday night my aunt and sweet baby cousins came in town. Words can't describe how much  I've missed them. It was so wonderful to see them for a couple of days.

I was out of school on Good Friday, so I spent the morning playing with my cousins and the afternoon shopping with my friend, Linsey. That night was my bachelorette party. :) My bridesmaids and I had dinner at spaghetti warehouse then came back to Fallon's apartment for games and the lingerie shower. I had such a wonderful time with the girls!

Saturday morning was my Bridal Brunch (pics to come). Good food and more fun with the girls. I really do have the BEST bridesmaids ;) I spent the afternoon laying by the pool and cooked out with my family that night.

Today was Easter of course. Jon and I went to church and had lunch with my family then went to his house for dessert.  We spent the rest of day working on our little house. It's really coming together! All our hard work is paying off! I will post house pictures soon!

45 days.

...since my last blog post.

Whew! Life has been crazy for me the past month and a half.  Mostly consumed by schoolwork. But I am finally seeing the light at the end of the tunnel. Tonight I turned in my LAST paper as an undergrad.  A 110 page paper to be exact. I am worn out. But now that I have more time on my hands, I'm ready to jump back into the blogging world. 

Besides my exhaustion from student teaching, life is quite amazing. Marrying the love of my life in 33 days. Couldn't be happier :)
