Colossians 3:23-24

The good Lord has called me to teach. Of that I have no doubt. And even though teaching can be very stressful and difficult, I am glad it is the path He has laid before me. My career will give me the opportunity truly serve Him & others every single day. And through teaching, God can mold me into the woman He wants me to be.  

Love, joy, peace, patience, kindness, goodness, faithfulness, gentleness, and self-control.

{Also known as} The fruits of the spirit. All of which I consider necessary to be a truly GREAT teacher. I'm excited to see how God will use my experiences this year to make me more fruitful. Man. I get SO excited every time I think about it!

I've been thinking about Colossians 3:23-24 non-stop lately. It says:

“Work willingly at whatever you do, as though you were working for the Lord rather than for people. Remember that the Lord will give you an inheritance as your reward, and that the Master you are serving is Christ. —Colossians 3:23-24

Whenever I start to doubt myself & think I can't do it, this verse is my motivation. EVERYthing I do in that classroom is for the glory of God. I will give 110% everyday because I AM working for the Lord. 

He gave me the passion to teach. 
He wanted me to teach Kindergarten at HES. 
He believes I can make a difference in the lives of my students.
He believes in me. 

And I'm not going to let Him down....

Nacho-rific Stuffed Chicken.

Saturday morning, I woke up before Jon & decided to pass the time watching some Food Network until he got up. 
Hungry Girl was on and she was making this awesome looking chicken. Nacho-rific stuffed chicken to be exact. It looked awesome! I immediately decided I wanted to try it this week.
Very few ingredients & only 270 calories.
Perfect. :)

Well, I made it tonight & it was incredible.
I can't get over that it was only 270 calories.
I'm definitely a Hungry Girl fan from here on out.
Try this one out. It's good :)

Here is the recipe: Nacho-rific stuffed chicken.

I did make a few slight changes though:
*I had no fat free cheddar, so I just used regular.
*I used Queso Fresco & Chipotle Laughing Cow wedges instead of the Swiss. 
{Why not add a little extra mexican flavor, right?!}
*I used chili powder & cumin instead of the taco season.
*Since my chicken breast were so thick instead of rolling it, I cut it opened and stuffed it.

Here is how mine turned out...
270 calories of pure deliciousness.

I think the star/secret ingredient of this recipe was the Laughing Cow Cheese...
Mmmmm this stuff is SO good!

I've got to figure out more ways to cook with this stuff!

What I'm loving Wednesday.

I'm loving that we will be on the beach in 16 days!
I'm in major need of a vacation!

I'm loving working out with my husband.
In the past, when Jon & I went to the gym together we each did our own thing, but this week we started working out together!
We are having so much fun at the gym!
He is a great workout partner!
He pushes me with the weights. I push him with the cardio.
We motivate each other :)
& our goal is a easy one: 3 times a week.

I'm loving Mulan's Chinese Takeout.
Last Friday, Jon & I, tried out Mulan's because it was recommended to me by a couple of friends.
It was the best chinese food we've EVER had!
We ordered golden sesame chicken & chicken lo mein.
It was incredible! 
We will probably be ordering it every Friday night from now on!

I'm loving my new nail color!
I finally tried out the bottle of OPI Mermaid Tears I bought last week. Isn't it great?!

I'm loving my new AE shorts.
They're SO comfy!

I'm loving Chick-fil-a's sweet potato fries.
I finally tried these this weekend & loved them!
I'm a sucker for some sweet potato fries!

I'm loving these monogrammed phone covers!
They're all SO cute!

I'm loving strawberries.
I've already eaten them three different times today!

I'm loving the sunny forecast this weekend!
Perfect weather to be poolside with family & friends :)

It's Monday, but it's OK because....

{one} My husband is amazing.
I can be difficult at times. I'll admit it.
But my husband is a saint.
He is always kind. Always loving. Always supportive.
I've been extra stressed the past few days worrying about jobs/interviews & Jonathan has been so stinkin' great.
Constantly praying for me & encouraging me.
I'm EXTRA thankful for my sweet man this week.

{two} I now own all 9 seasons of Seinfeld!
I love this show! It's absolutely hilarious!
Jon & I have been watching it every night before we go to sleep.
This weekend I finally bought the last two seasons to complete the series!

{three} There are only 19 more days until this comes out!
HP love. :)

{four} I finally changed my name on my driver's license!
Valerie Kelley Griffin!

{five} I'm officially a TEACHER!

I'm SO excited about teaching Kindergarten!
I just can't get over it! :)

God is GOOD.

God is very, very good.
& faithful.
There is no need to worry. He is in control.
Today has been a good day.
No. A GREAT day.
I'm so THRILLED to announce that I am the newest Kindergarten teacher at Highland Oaks Elementary School!
I know without a doubt this is exactly where God wants me to be and I'm so excited to start this next chapter in my life as a Kindergarten teacher :)

the McKays.

A week ago today I got to stand behind my beautiful friend, Mackenzie, as she married the love of her life. 

It was such a wonderful day.
Minus a tiny, little 10 minute rain shower,  
the weather was perfect.
& Mackenzie was GORGEOUS.
Her hair, her make up, her dress.
Just stunning.

Mac is one of the sweetest girls you will ever meet and it makes me so happy to see her so in LOVE.
