Bubble Up Enchiladas

I've had this recipe for Bubble Up Enchiladas pinned on Pinterest for months & last night I finally made it!
It was a major hit with me & the mister. It is delicious, easy, & much healthier than your typical enchiladas!

Here's what you'll need:
1 pound {I used 1.2 lb.} ground turkey
1 {10 ounce} can of enchilada sauce
1 {8 ounce} can tomato sauce
1 can of reduced fat biscuits
1 1/2 cups reduced fat cheese

Recipe serves 6-8

Here's what you'll do:
Preheat your oven to 350 degrees.
Brown turkey & drain if needed.
{I seasoned my turkey meat with cumin, chili powder, salt, & pepper.}

Mix in the can of enchilada sauce & the can of tomato sauce.

Cut the biscuits in fourths.

And add them to the meat mixture.
Then you just dump the whole thing into a greased casserole dish {I used a 9x13}.

Bake for 25 minutes. Take it out & sprinkle the cheese on top & bake for 10 more minutes.
Let it cool for 5 minutes before digging in.
It will look a little something like this when you take it out of the oven.
It looks kinda crazy, but I promise it is so SO good!

& the leftovers made a yummy lunch today.
Mmmm mmm

Wanna know what makes this recipe even more wonderful?
It is a Weight Watchers recipe!
390 calories per servings. Absolutely awesome.
I will be making bubble up enchiladas over & over again :)

Tonight I'm trying a recipe I've dying to try for a looooong time.
I'm making spaghetti squash! Stay tuned to see how it turns out!

Blog Love: The Small Things.

One of my absolute FAVORITE blogs is: Kate's The Small Things. This girl has fantastic hair! You've probably seen her before. She is all over Pinterest! She gives great hairstyle tutorials and product reviews on her blog. I get so excited every time I see she has a new post! If you aren't following her already, you really should!

Two things I've recently purchased after seeing them on her blog are:
Aquage Uplifting Foam & a Birchbox subscription.

Aquage Uplifting foam is my new favorite styling product.
It is so SO great! Its a volume-building product that gives my hair body like I've never had before!
And it last ALL day. I can't rave about this stuff enough.

The second thing Kate persuaded me into purchasing is a Birchbox subscription.
For those of you who have know clue what Birchbox is, let me fill you in.
Each month I will receive a "birtchbox" that will contain 4-5 product samples.
The samples can be skincare, makeup, nail polish, haircare, etc.
When I signed up I had to complete a beauty profile that would help them chose my products.
They asked about my hair color and type and skin color and type along with a few other questions.
A yearly subscription is $110. My first box should come in December. I can't wait!
I will let you know what I get!

Our first Thanksgiving as husband & wife couldn't have been any better.
We had lunch with my family & dinner with his.
My day included: LOTS of yummy food, a 3 hour game of Phase 10, & our amazing families.
Thanksgiving 2011 was perfect :)
We had a very PLAID Thanksgiving. :)

I have so much to be thankful for this year!
What I am most thankful for is LOVE.
The unconditional love of my Savior who died so I could spend eternity with Him.
The love of my husband who is always kind, caring, & definitely more than I deserve.
The love of my family & friends who always support me & keep me smiling.

I am also thankful for a few little things that just make life a little more fun!

chap stick
Old Navy
my Iphone
infinity scarves
Disney World
CBS comedies
chips & salsa
Harry Potter
my ENT doctor
Vera Bradley
lunch dates with Mom
Christmas movies
date nights
Victoria Secret sweatpants
Just to name a few...

I hope you & your families had a wonderful Thanksgiving this year :)

Fill in the blank Friday.

1.   Waking up at the break of dawn to go shopping is my idea of   pure torture.

2.   If I were to go shopping today I would be on the hunt for   a new camera. I don't really like mine However; its not worth the madness of Black Friday  .

3.  The best thing I ate yesterday was    my MIL's sweet potato casserole. AMAZING .

4. Something I've been learning lately is   to appreciate the beauty in my own life & never take a day for granted!

5.  I cannot start my day without   Allegra D + Nasanex. If I forget my nose is a mess & I have a headache all day.

6.  My nighttime attire consists of    a HUGE oversized t-shirt & VS sweatpants. But the pants have to come off before bed or I'll get too hot!

7.  I am looking forward to   TODAY! I have LOTS of fun things going on today! I am seeing White Christmas at the Orpheum and the LSU/Arkansas game is today! OH & putting up our Christmas tree tomorrow!

Thanksgiving Eve

Loving all the family time this Thanksgiving Eve! We had a delicious Mexican dinner & now we are back at my parents. The men are asleep {since they are hunting in morning} & us women are watching Love Actually. Have a wonderful day tomorrow! Eat lots of goodies!

What I'm Loving Wednesday

I'm loving that I have my laptop back.
Five days & $300 later, my laptop is home & as good as new!

I'm loving continuous Christmas music on the 104.5 The River.
Falalalalala :)

I'm loving that I'm going to see White Christmas with my mom, sister, & grandmother this weekend.
White Christmas is one of my favorite movies, so I can't wait to see it come alive on stage!

I'm loving Old Navy's Shawl-Collar Cardigans.

I have this cardigan in three colors. Cute & comfy!

I'm loving The Lost Hero.
I'm absolutely loving the first book in The Heroes of Olympus series, which picks up right where the Percy Jackson series left off. I love how Rick Riordan ties in Greek & Roman Mythology with his story that is set in the twenty first century. It's a definitely page turner. I have to force myself to stop reading each night.

I'm loving that Thanksgiving is tomorrow.
I can't wait to eat yummy food & spend time with my family!
We are heading to Somerville as soon as Jonathan gets home from work!

Happy Hump Day!

The world would be a much better place if there were more people like Tim Tebow.

The Vow

I just stumbled across the trailer today for Rachel McAdams & Channing Tatum's upcoming film The Vow.
It looks so sweet & it comes out in February. Perfect for our Valentine's Day date :)

Goodnight y'all!

Crock-pot Mac & Cheese

To say I love this macaroni and cheese is an understatement.
I made it three times in a week. Yep. THREE! It's sooooo good!

It's so delicious & extremely easy! And I just love using my crock pot.
Plus this recipe is from Ms. Paula Dean, so you know its good. ;)
Paula Dean's Crock Pot Mac & Cheese

2 cups uncooked elbow macaroni (an 8-ounce box isn't quite 2 cups)
4 tablespoons (1/2 stick) butter, cut into pieces
2 1/2 cups (about 10 ounces) grated Cheddar cheese (Plus a bit more to sprinkling on top)
3 eggs, beaten
1/2 cup sour cream
1 (10 3/4-ounce) can condensed "Campbell's" Cheddar cheese soup
1/2 teaspoon salt
1 cup whole milk
1/2 teaspoon dry mustard
1/2 teaspoon black pepper

1. Boil the macaroni in a 2 quart saucepan in plenty of water until tender, about 7 minutes.(Add a pinch of salt to the water, to ensure the pasta does not stick together.)
2. Drain.
3. In a medium saucepan, mix butter and cheese together, until it is melted together.
4. In a slow cooker, combine cheese/butter mixture and add the eggs, sour cream, cheddar cheese soup, salt, milk, mustard and pepper and stir well.
5. Add drained macaroni and stir again
6. Set the slow cooker on the low setting and cook for 3 hours, stirring occasionally. (It really doesn't have to cook this long. The second time I made it, I only let it cook for a little less than two hours and it was just as good!)
7. Uncover, and (optional) add another 1/4 cup of cheddar cheese on top, in the last 20 minutes of cooking.

Weekend fun.

Happy Monday! And Happy THANKSGIVING week! :)
How was your weekend? Good? I hope so! :)

We spent the night with my parents in Somerville on Friday night.
Jonathan passed out early & I stayed up until midnight or so watching football & reading the Hunger Games.
I finished the series! I didn't enjoy the third book nearly as much as the first or second.
However; I did LOVE that the main character chose the guy I wanted :)
The movie comes out in March & I can't wait to see it! The first book was definitely my favorite!
Next thing I'm reading: The Heroes of Olympus series.
It's a continuation of the Percy Jackson series, which I LOVED!

Okay, now back to the rest of the weekend.

Saturday, Dad & Jonathan hunted in the morning, came in and took a nap, then went back that afternoon.
Mom & I put up her Christmas decorations ALL day! I was so glad I could help her, we had a great time!

Mom gave a super sweet surprise Saturday.
She has been {secretly} collecting ornaments for me since I was a baby. One for every year of my life.
I was so surprised! :) She wanted me to have them this Christmas since I'm married now.
This is a tradition I will definitely have to start with my own children one day!
Just one of the 24 ornaments. This one is from 1990!

We did some Christmas shopping on Sunday and magically stumbled into an AMAZING sale!
I walked into Old Navy yesterday at 4:35 and was told, "ALL sweaters 75% off. Sale ends at 5:00."
I was so shocked I had to get her to repeat it! 75% off and only 25 minutes to shop!
And the line was HUGE! Holy moly!

But I did it! I got seven sweaters that would have cost $250 for $62! Awesome.
Did anyone else stumble across this sale?!

I don't think I can do a post about this weekend without talking about college football!
So many upsets, so much fun to watch! I was so happy to see the BCS rankings yesterday!
1. LSU
2. Alabama
3. Arkansas

The SEC West is dominating the world of college football at the moment & I'm absolutely loving it!
Go Razorbacks!

I have a date today that includes:
 one of my bffs{Linsey}+Chickafila+Memphis basketball.

I can't wait. GO TIGERS!

Hope you have a great Monday!

Fill in the Blank Friday.

That means it's time to fill in those blanks with Lauren @ The Little Things We Do.

1.   A nervous habit I have is:    checking my cell phone. If I am in a situation where I feel uncomfortable, I just keep my eyes glued to my iPhone. Checking facebook, pinterest, email, etc...It's sad, but true.

2.   Something that makes me sad is:  Sister Wives. I like the show & they seems like wonderful people. HOWEVER; sometimes I just want to cry while watching it. My marriage is so special to me. Jonathan is my rock, the love of my life, my best friend, & my partner. And the best part is he is all MINE. I cannot imagine sharing him with THREE other woman. That is not how God created marriage. Breaks my heart, I tell you.

3.  Today I am thankful for:   Justin from the Apple Genius bar. Let me explain. Guys, last night there was an accident. I terrible one. My poor Macbook Pro fell from the arm of my favorite cozy chair and hit the fire place. I drop it a lot, so I thought no big deal. I'll just turn it back on & it will be good to go. WRONG. It wouldn't turn on. I took it to the Apple store today, but I had a terrible feeling  it was gone for good. Thankful, Justin, the guy helping me told me that it could be fixed for $280. Yes, that's a lot of money but I'm thrilled that my laptop isn't gone for good! I'll have my baby back in 5-7 days. Thank you Justin for giving me that great news today!

4. My favorite room in my house is:   my living room. When we first moved into our house it was my least favorite room. It has wood paneled walls. WOOD PANEL, people! However; now I love it. I added cute curtains, a  great rug, & some fun throw pillows and now its super cozy. :)

5.  I can't stand:  Dr. Pepper. Yucky.

6.  If I had an extra $100 to spend on whatever I wanted today I would:   go to Old Navy. It's my favorite. Plus, it is cheap so $100 would go a LOOONG way in there.

7.  The last person I hung out with was :  Justin from the Apple store :) haha

I look forward to filling in the blanks with Lauren every Friday.
If you haven't joined in yet, you really should :)

I hope y'all have a great weekend!

Soon as Jonathan gets home from work we are heading to Somerville to spend the night at my parent's house. Jon & dad are getting up early to hunt in the morning, while mom & I put up their Christmas tree.
Sounds like a great Saturday to me :)

Oh Target.

Hello ladies!
Hope you all are having a lovely Thursday.

I made a Target run this afternoon to get a bath mat. Just a bath mat.

Yeah, right.

I decided to check out the shoes & found two FULL rows of shoes on clearance.
Flats. Heels. Boots. Wedges. Oxfords. Rain boots. All 30% off.
So if you've been eyeing some shoes at Target recently, now is the time to go!
I stumbled upon these beauties.
An adorable pair of black suede wedges. $10 off.
So darling. They looked fabulous with my skinny jeans. I had to get them.

I always end my Target trips by browsing the dollar section.
They had lots of cute Christmas gift bags & wrapping paper. I stocked up!
So cute for just a dollar each!

They had some super cute Christmas cupcake decorations.
I got three cupcake decor sets. Some red & green sprinkles. & an icing dispenser with four different decorative tips. {I've always wanted one!}
I'm all ready for some baking!

And I picked up this little metal tree.
It was a splurge at $2.50 :)
It's the first and ONLY decoration we have up.

I think it's time to get the tree out! However; Jonathan says I have to wait until after Thanksgiving...
We'll see about that ;)

What I'm loving Wednesday.

I'm loving Chocolate Dipped Coconut Luna bars.
My new favorite flavor. These are delicious!

I'm loving that I finally own Harry Potter 7.2.
My HP collection is complete!

I'm loving burnt orange pants.

Fabulous. I've got to get a pair!

I'm loving the Razorback ornament I got last weekend.
Yay! So cute!

I'm loving The Hunger Games series.
I started this series last Thursday night and I've already read the first two.
I'm started the last one last night. I can't wait to see how it ends!

I'm loving my Old Navy Trousar jeans.
These jeans are so cute & comfy. They are my new favorite jeans!
Thank you Mackenzie for introducing them to me!

Happy Hump Day y'all! :)

10 Day YOU Challenge: one picture of yourself.

One picture of yourself
Finally finished!
This took me wayyyy longer than it should have!

A Terrific Tuesday.

How's was y'alls day? I hope it was fantastic. Mine was!
I went with my daddy to my Memphis Tiger's first regular season game against Belmont.

We had an absolute BLAST! It was such a fun game!

Every year I get so excited to see the Intro video. I love this year's video!
I literally got butterflies in my stomach when I watched it for the first time at the game.
I am so in love with my Tigers! Here is the Memphis Tigers 2011-12 Intro video:

The Tigers came out in retro '72-'73 jerseys for the season's opener. I thought they looked awesome!
Can you see the little "21" in the top corner of their jerseys?
They wore these in memory of former Memphis coach, Larry Finch, who died this year.

My boys played great! Belmont almost defeated #6 Duke this past Friday, only losing by one point.
So I was super happy my #10 Tigers beat them by 16 points today! GO Tigers!
I'm really looking forward to this season!

Jonathan & I had a good workout tonight & now we are at home being lazy. He is playing xbox & I'm laying in bed watching basketball and hoping Hope Solo gets kicked off Dancing With The Stars! I will also be finishing the second Hunger Games book, Catching Fire, tonight. Ahhh, I love this series!

Goodnight friends :)

10 Day YOU Challenge: two songs

These are not necessarily my favorite songs, just two songs I love & could never get tired of no matter how many times I've heared them!

Two Songs
1. Slumber by Needtobreathe. Needtobreathe is without a doubt my favorite band. I love ALL of their  songs. Slumber is my favorite track off of their newest album.

2. Today by Joshua Radin. Joshua Radin is another favorite of mine. He's music is so beautiful. I always said if I ever meet a guy that could make me feel how I feel when I hear Joshua Radin's music, I would have to marry him. And I did. In fact,  this song was playing in the background the moment Jonathan got down on one knee and asked me to be his wife.
